The Sacher cake, in German Sachertorte, is a typical Austrian chocolate cake. It consists of two pieces of chocolate cake separated by a thin layer of apricot jam covered with dark chocolate frosting.

Ingredients

10 portions
  • 150 grams butter
  • 150 grams sugar
  • 6 eggs, separate yolks and whites
  • 150 grams chocolate
  • 1 tablespoon liquid vanilla
  • 1 cup milk
  • 100 grams flour
  • 50 grams cornstarch
  • 4 tablespoons apricot jam
  • 200 grams sugar
  • 1/5 cups Water
  • 200 grams bittersweet chocolate, Turin
  • 1 teaspoon butter

Preparation

For the paste of the cake: beat the butter (150 gr) with half the sugar (75 gr) to form a cream. Add the yolks, the melted chocolate (150 gr) and the vanilla essence.
Beat the whites with the rest of the sugar (75 gr) to form a meringue with consistency and add the previous shake, together with the flour sifted with cornstarch (corn starch) and milk.
Spread a round mold with butter and flour and bake the cake for 1 hour or 1 and 1/4 hour. Cool it, unmold it and slice it in two parts by the horizontal center. Spread with the apricot jam and put it together again.
For the chocolate glaze: boil the water with 200 gr of sugar until it thickens. Remove from the heat and add the chocolate cut into pieces together with the butter (1 teaspoon). Stir and when it begins to thicken, cover the cake.

PRESENTATION

Serve with vanilla ice cream.
