Ingredients

3 portions
  • 1/4 kilos onion
  • 1/2 kilos chicken breast, shredded
  • 1 branch celery
  • salt, to taste
  • black pepper, to taste
  • 100 grams rice flour, to thicken
  • 1 tablespoon butter
  • 1/2 cups evaporated milk
  • 1 cup amaranth
  • 3 eggs, White
  • 100 grams carrot
  • 50 grams raisin
  • 5 slices cheddar cheese
  • oils, necessary amount

Preparation

In a frying pan, sauté the onion and celery finely chopped with a little oil when they have crystallized salt and pepper to taste.
In another pan put a little oil and the tablespoon of butter to melt over low heat, when liquid add 3 tablespoons of rice flour, add the mixture. Once it begins to brown, slowly add the milk to form a thick sauce.
Add the mixture of the other pan and the chicken, let it cool for at least 2 hours or ideally from one day to the next, later.
Put in a pan oil to put to fry or heat the oven, put on a plate a beaten egg, on another the amaranth and form the croquettes with your hands.
Pass through the egg and pass through the amaranth so that they remain as breaded. Put in the pan until golden brown.
A carrot base is served on the plate and on the croquette two raisins are placed and the slices of cheese slices are cut as in the photo to give a good view of the dish.
