For the caramelized onion, cook the onion in a saucepan with hot oil over low heat while stirring, until it begins to turn brown. Add the balsamic vinegar and cook for a few more minutes. Add the mustard and season with salt and pepper; mix and reserve.
Soften the cream cheese in a bowl together with the cream and the cottage cheese. Add chistorra, caramelized onion, celery, black olives, chili flakes, chives, parsley, and lemon zest; season with salt and pepper, mix until completely incorporated.
With the help of an ice cream spoon, place the mixture in a circle and cover with a non-stick plastic, shape it into a thread with the help of your hands. Refrigerate until firm enough.
Once the dip is firm, finish shaping the thread with the help of a spatula. Put almond around the thread and decorate with parsley. Serve accompanied by whole grain crackers.
