Preparation
Clean the artichokes by removing the thick leaves from the base, the tips and the stems.
Cook them in salted water and yellow lemon juice for 40 minutes after they boil. Cool and undo them until you get hearts. Reserve the cooked leaves.
Pour into the glass of your Vitamix®, the artichoke hearts, the spinach, the garlic, the onion, the chilies, the mayonnaise, the yogurt, the lemon juice and season with salt and pepper.
Close the lid tightly, select speed 1, turn on the blender and slowly increase the speed to 10 and then to high level. Blend for 2 minutes or until you obtain a homogeneous and smooth mixture.
Serve the dip and accompany with the canes of vegetables, artichoke leaves and toast.
