Prepare this rich and creamy healthy artichoke dip accompanied by pita bread and vegetables. The best part is that you will not know how easy and smooth it is. You just need to cook the artichokes and liquefy the ingredients to prepare it. It's the perfect snack!

Ingredients

6 portions
  • 5 artichoke
  • water
  • salt
  • 1 yellow lemon
  • 1/2 cups spinach
  • 1 clove garlic
  • 1/8 onions
  • 2 jalapeño chiles, without seeds
  • 2 tablespoons light mayonnaise
  • 1/2 cups greek yogurt
  • 1 tablespoon lime juice
  • salt and pepper
  • 1 cucumber, on sticks, to accompany
  • 1 carrot, on sticks, to accompany
  • 3 stems celery, on sticks, to accompany
  • toasted bread, To accompany

Preparation

Clean the artichokes by removing the thick leaves from the base, the tips and the stems.
Cook them in salted water and yellow lemon juice for 40 minutes after they boil. Cool and undo them until you get hearts. Reserve the cooked leaves.
Pour into the glass of your Vitamix®, the artichoke hearts, the spinach, the garlic, the onion, the chilies, the mayonnaise, the yogurt, the lemon juice and season with salt and pepper.
Close the lid tightly, select speed 1, turn on the blender and slowly increase the speed to 10 and then to high level. Blend for 2 minutes or until you obtain a homogeneous and smooth mixture.
Serve the dip and accompany with the canes of vegetables, artichoke leaves and toast.

PRESENTATION

Serve the dip with vegetable sticks, artichoke leaves and toast.

TIPS

The yellow lemon juice during cooking will help the artichokes do not rust.
