The burrata is an extra-gritty 'mozzarella' that deserves to be the star of the dish, but it is advisable to eat fresh to prop up its properties. To accompany, you only need crispy bread, roasted tomatoes and some basil leaves, or this simple jam.

Ingredients

4 servings
  • 150 grams of sugar superfine
  • 500 grams of FIG ripe without stems, chopped
  • 5 pods of star anise whole
  • 2 spoonfuls of balsamic vinegar
  • 1 piece of ciabatta bread or baguette cut into slices
  • 2 balls of fresh mozzarella cheese or burrata
  • lemon zest (1 lemon)
  • extra virgin olive oils
  • Salt
  • black pepper

    Preparation

    For the marmalade, pour the sugar, a pinch of salt and the star anise in a pan. Bring to medium heat until the sugar begins to caramelize. Add the figs and stir.
    Lower the heat and add a tablespoon of vinegar. Cook the marmalade over low heat, stirring until it thickens and the figs almost melt. Remove the star anise.
    Crush the figs with a potato presser, remove the jam from the heat and let it cool.
    Meanwhile, prepare the toast. Sprinkle slices of ciabatta with a little olive oil and season with salt and pepper. Place them on the griddle and toast them on both sides for 1 or 2 minutes, or until golden brown.
    Place the burrata in a bowl, season it, sprinkle it with a little oil and sprinkle with lemon zest. Spread the toast with the fig jam and serve with the burrata.
