Tartlets of Olive with Tomato

These tartlets of olives are a delight to botanize and they are also very easy to prepare. A different option for your meetings; This way you will be able to give your guests a rich snack with a lot of flavor since they carry olives, anchovies, capers, garlic, Manchego cheese, mustard and lemon juice. Do not let them pass.

  • 225 grams puff pastry
  • 100 grams black olives
  • 2 tablespoons capers
  • 1/2 cloves garlic
  • 1/4 cups olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoons parsley, chopped
  • 1/4 cups manchego cheese, grated
  • 8 cherry tomatoes, sliced
  • 6 leaves basil
  • 4 anchovies


Heat the oven to 220ºC. Spread the puff pastry, thin, chop it with a fork over the entire surface. Cut casters 6 cm in diameter and put them on a greased baking tray, put waxed paper on top of the casters and on top of another baking tray, so that the casters do not inflate a lot when baking. Bake 12 minutes to golden brown and remove the wax paper and the tray. Let cool.
Apart from chopping the olives, capers, garlic and anchovies finely, this can be done with Food Processor. Add oil, lemon juice, mustard and parsley, try it and if necessary put sea salt.
Put a teaspoon of this mixture of olives on toasted puff pastry rolls, sprinkle some grated cheese on top and garnish with a cherry tomato caster.
Now to serve bake 5 minutes to melt the cheese a little, remove from the oven, garnish with basil on top. Transfer to a platter and serve immediately.
