A recipe with exotic flavors that my family and I love. The taste of coconut milk softens the flavor of the curry, it is simply a perfect combination.

Ingredients

4 portions
  • 2 tablespoons olive oil
  • 1 onion, median
  • 2 bell pepper
  • 1 tablespoon curry powder
  • 25 milliliters coconut milk
  • 750 grams cod, in fillet
  • 10 milliliters water
  • salt and pepper

Preparation

Cut the cod fillets into cubes.
Peel and chop the onion.
Wash and cut the peppers (in small pieces).
In a pan, heat the olive oil, add the onion and peppers, let them cook for 5 minutes.
Add the curry and integrate well and let cook for two more minutes.
Add water and coconut milk, mix well. When it starts to boil, add the cod cubes, salt and pepper.
Leave to simmer for ten minutes, stirring gently from time to time.
Remove from heat and serve with white rice or garnish of your choice.

Cuando envié la receta escribí las medidas de los ingredientes líquidos en centilitro, no en mililitro. No se porque los editores no lo tomaron en cuenta, entiendo que debieron hacer la conversión, (o sugerirme de hacerlo)antes de cambiar la unidad de medida. Debieron hacer la conversión o dejarla en centilitro ya que no son equivalentes y el resultado no sera el mismo.
