Soak the cod the day before so that it is at an optimum salt point for the spiritual cod. In the first 6 hours, change 3 times the water every 2 hours, and then soak for another 12 hours.
Cut the garlic, onion and carrot very chopped in brunoise. Sauté the vegetables and add the drained cod. Add the bread and then the milk. Let everything cook until it acquires a thick consistency.
Fry the potatoes in very hot olive oil.
For the bechamel: Sauté the flour with olive oil and gradually add the milk with the mixed cream. Finally, aromatize with nutmeg and pepper. Rectify the salt point.
For the mounting of the plate, a baking tray is required. Place the mixture of cod in the base, then the potatoes, and above the béchamel sauce. Gratin baked 15 minutes and we have our spiritual cod ready.
