Buy the fish without entrails and fresh. To know if the fish is in good condition, the eyes should be clear and the gills a bright red color. The more noticeable this is, the fresher the fish will be.
Place the fish on a board and scrape each side with a knife at a 45° angle to remove the scales, always from the tail to the head; do it in one smooth motion and always towards the same side. Afterwards, remove the fins, both lateral and those on the top and bottom, with scissors.
Rinse the fish in cold water and rub it with your hands; this will help remove any excess scales that may be stuck to the skin. Now, dry the fish very well with paper towels to remove all excess moisture.
At this point, it's time to open the fish: Place the fish on a flat surface, with the backbone facing you. Puncture the back of the fish with the knife and slide it to fillet. This process should be very slow, and you must keep the knife blade always perpendicular to the backbone. To obtain a good fillet, you should take your time. With small cuts, slice through the flesh on one side and then the other. Continue this way with the rest of the piece, and soon you'll notice how the fillet will come out. Do not discard the scraps, as you can use them in broths.
Now remove the skin using a similar technique, trying to keep the fillet as whole as possible. If you practice this technique for cleaning fish, you’ll achieve great results—do it whenever possible!
