For this time of Lent, there is nothing better than preparing a Mexican toast of fish, with a delicious marinade based on orange juice, lemon and the delicious taste of black Huichol® sauce. Prepare them as a starter or main course.

Preparation
In a bowl, mix the fish with the lemon juice, the orange juice, the Huichol® black sauce, the oregano, the cumin and season with salt and pepper. Marinate for 30 minutes in refrigeration.
Once marinated, mix the fish with the tomato, onion and cilantro. Rectify seasoning and reserve.
For the guacamole, process the avocado with habanero pepper, lemon juice, onion, cilantro, salt and pepper in a food processor until you obtain a smooth puree.
Spread some guacamole on each toast and add the fish without juice, garnish with alfalfa germ and serve.
