Prepare this recipe for easy toasted bread, this preparation of tortillas spread with refried beans and stuffed with sofrito meat of tope, covered in a tomato sauce with habanero pepper, is a complete delicacy and a specialty of the State of Campeche.

Ingredients

  • 2 cups of Water
  • 1/4 of piece of White onion
  • 2 teeth of Garlic
  • 2 spoonfuls of epazote finely chopped
  • 1/4 of kilo of dogfish without skin and without bone
  • 1/4 of tablespoon of Salt
  • 2 pieces of Tomato Puree with Chili Fresco del Fuerte®
  • 2 pieces of habañero pepper roasted
  • 1/4 of piece of onion grilled
  • 1 tablespoon of lard
  • 1/4 of tablespoon of Salt
  • 1 tablespoon of oil
  • 1 tablespoon of Garlic finely chopped
  • 1/4 of Cup of onion finely chopped
  • 6 pieces of tortilla
  • 1 Cup of refried beans
  • to taste of avocado to decorate
  • to taste of habañero pepper sliced, to decorate
  • to taste of epazote to decorate

    Preparation

    Heat a pot on high heat with water and cook the dogfish with onion, garlic, epazote and a little salt until well cooked. Strain, undo the dogfish and reserve.
    For the sauce, blend the Tomato Puree with Fresh Chile Del Fuerte® with habanero pepper, white onion and salt.
    Cook the sauce with the lard in a pot for 10 minutes, add the fresh epazote, season to your liking. Reserve the sauce.
    Heat a pan over medium heat with the oil and fry the garlic with the onion, add the dogfish, cook 10 minutes. Remove from heat and reserve.
    Heat the tortillas in a comal over medium heat, remove the tortillas from the comal and spread with refried beans.
    Serve salsa in a mirror-shaped avocado dish, place an omelet with beans, fill it with dogfish and repeat until it forms three layers, ending with an omelette. Decorate with habanero pepper and fresh epazote leaves. Enjoy

    PRESENTATION

    Serve with epazote leaves and slices of habanero pepper.

    TIPS

    You can accompany with avocado if you wish.
