The shrimp to guajillo on baked pepper and habanero sauce is a very tasty preparation, easy to prepare and with an exquisite flavor. The guajillo shrimp is the ideal recipe for cooking in the oven.

Ingredients

6 portions
  • 1 kilo big shrimp

  • 10 guajillo chilies, without seeds and soaked (for sauce)
  • to taste cumin, for the sauce
  • 3 peppercorn, for the sauce
  • 20 milliliters apple vinegar, for the sauce
  • to taste salt and pepper, for the sauce
  • 6 bell pepper, of colors (for baked peppers)
  • 20 milliliters oil, (for the baked peppers)
  • to taste salt and pepper, for baked peppers
  • 4 habanero peppers, green (for habanero sauce)
  • 4 habanero peppers, yellow (for habanero sauce)
  • 10 milliliters white vinegar, (for habanero sauce)
  • 100 milliliters olive oil, (for habanero sauce)
  • to taste salt and pepper, amount needed (for habanero sauce)
  • 1 red onion, (for habanero sauce)
  • 3 lemons, (for habanero sauce)

Preparation

Clean the shrimp. Season and marinate in the guajillo sauce.
For the guajillo sauce: Grind the ingredients of the sauce until you get a paste.
For the peppers: Put a little fat and put them to bake at 200 ° C until they are roasted. Remove from oven, sweat, peel, devein and cut into medium julienne.
For the habanero sauce. Roast the chiles in the same tray as the peppers. Grind with the vinegar and olive oil, season and reserve.
For the purple onion: Filetear very thin. Add finely chopped cilantro and lemon juice, salt and pepper.
For shrimp: Put the shrimp in a tray to bake for 20 minutes at 200 ° C.

PRESENTATION

On a plate put a bed of peppers, then the shrimp and top with onion. Serve with habanero sauce.

TIPS

With a toothpick, remove the shrimp stomach, which is on the back of it.
