Prepare this delicious filet salmon mignon wrapped in bacon. Take a delicious blackberry sauce with balsamic vinegar and spices. It is very simple to make and has a great flavor. Strip up with this elegant dish that is ideal for a dinner or a special occasion.

Ingredients

4 portions
  • 8 salmon fillets, without skin
  • 4 smoked bacon
  • 1/2 teaspoons salt
  • 1/4 teaspoons black pepper
  • 1/4 cups oil
  • 1 cup blackberry
  • 100 grams brown sugar
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoons cinnamon
  • 1/2 teaspoons ground pepper, "all spice" mix
  • 1/2 teaspoons Ground ginger
  • 1 pinch clove

Preparation

Preheat the oven to 200 ° C.
Save some blackberries to decorate, grind the rest until you have a puree.
For the sauce, heat the blackberry purée in a pot along with the rest of the ingredients until the mixture thickens.
Roll the salmon fillets, using two fillets to form a wheel. Wrap a strip of bacon around each salmon and secure it with a toothpick.
Seal salmon fillets on both sides. Bake until, when introducing a thermometer to the center of the salmon, mark 50 ° C.
Remove the chopsticks and glaze the steaks with the blackberry sauce. Place some blackberries on top to decorate.

PRESENTATION

Accompany with baked chambray potatoes or sautéed asparagus.

TIPS

Remove the chopstick from the steaks before serving.
