Ingredients

15 portions
  • 1 kilo white fish fillet, (bold, catfish, bass, etc.) in strips
  • 1 cup flour
  • 2 tablespoons Dijon mustard, or prepared mustard
  • 1 cup tequila, of good quality
  • 3 eggs, milkshakes
  • 1 package ground bread, to breed the best quality
  • 2 tomatoes, matches in thin cubes
  • 1 onion, small, split into thin cubes
  • 2 serrano peppers, matches, in very thin cubes
  • 1 package corn tortilla, or flour according to your taste
  • 3 chipotle chilies
  • 1/4 liters fresh cream, thick
  • 2 tablespoons mayonnaise, home type
  • 1/2 cups parsley, chopped to garnish
  • salt, to taste
  • black pepper, to taste
  • Tabasco sauces, to taste

Preparation

Wash the fish, cut into strips of 2 centimeters approximately, wide and marina for 10 minutes with tequila, salt and pepper and a few drops of Tabasco sauce.
Drain the fish well and pass it through the flour.
Add the mustard to the eggs and beat very well that it is very well incorporated, pass the fish through the eggs and then the breadcrumbs pressing a little so that the pancake is very well cooked, fry the fish in the fryer until it is crispy and put it on paper so that it absorbs excess fat.
Apart, fry the tomato, onion and chilli in a little oil, add salt and pepper and leave it for only 3 minutes to be acclimated only, add 3 teaspoons of tequila and let evaporate. Reserve this as an accompaniment on one side or inside the cue.
Apart prepare in the blender the sauce that are chipotle chiles with cream and mayonnaise, adding salt to taste, liquefy very well to form a mayonnaise, reserve to serve with taquitos, garnish these with chopped parsley.
