Preparation
Season the 4 tuna loins and pass them through the flour for breading. Heat the vegetable oil in a pot and fry for 3 minutes on each side. Place the loins on absorbent paper to remove excess fat.
In the same skillet sauté the onion and place the peeled tomato in cubes, next to the sweet aji. Sprinkle with the brown sugar, season with salt and pepper to taste and add the wine.
Place the tuna loins in the sauce, add the olives and raisins. Cover and let cook for 20 minutes over low heat.
