Drain the tuna and reserve.
In a bowl, mix the cheese, eggs, salt, pepper and nutmeg to taste. Incorporating the ground bread little by little until forming a mass that is held in one piece; like to make hamburgers or croquettes.
This mass is wrapped with the sky blanket, forming one or more rolls of approximately 4 or 5 cm. of diameter and that fit in the express pot. So that the dough does not come out, the rolls are tied at each end with the help of any thread.
Cook in a saucepan with water, enough to cover the roll halfway, putting in the water 1 tablespoon of oil, 3 tablespoons of vinegar, 1/2 onion and herbs.
Once it has boiled, cover and cook for half an hour, turn off and let cool. Once the express pot is cold open and flip the roll to cook the other half well.
Turn off the pot and let cool a little. Already cold, unwrap.
The roll is removed and placed in a container to cool completely.
For the parsley dressing: Put the parsley, oil, garlic, lemon juice, salt and pepper in the blender to taste.
Everything is processed and only if necessary, add a little water to liquefy everything well.
