Ingredients

1 portion
  • 2 liters Water
  • 1 teaspoon salt
  • 1 cup elbow pasta , #4
  • 1 chayote squash, no spikes
  • 1 cup kale
  • 1/3 cups whipping cream
  • 1 teaspoon butter
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1/4 cups parmesan cheese, grated

Preparation

In a pot with boiling water and salt, cook the pasta until it is al dente. Drain and reserve.
In another pot with boiling water and salt, boil the chayote until it is soft, for 15 minutes. Add the kale and cook 4 more minutes.
Cut the chayote into small pieces, blend with the kale and the cream to beat.
In a deep pan heat the butter with the sauce until it boils, add the pasta, mix and season.
Serve on a plate and garnish with grated Parmesan cheese.

PRESENTATION

TIPS

You can add a little chicken broth or water to the sauce in case it is very thick.
