Ingredients

4 portions
  • 2 cups Cauliflower Eva® Bits
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1 cup whole wheat flour
  • 1/2 cups tomato sauce
  • 1 cup mozzarella cheese, grated
  • 2 roma tomatoes, in medium thick slices
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • to taste basil leaf, to decorate

Preparation

Preheat the oven to 180 ° C.
For the dough, place in a bowl the cauliflower Eva® bits and dehydrate in the microwave for 4 to 6 minutes at maximum power. Mix the cauliflower with the egg, salt, pepper and flour. Knead until obtaining a smooth and homogeneous mass.
On a tray with waxed paper, spread the cauliflower dough with a rolling pin to form a circle. Bake for 15 minutes until golden brown.
Remove the cauliflower base and add the tomato sauce, mozzarella cheese and tomato slices. Season with olive oil, salt and pepper.
Bake 10 more minutes or until the cheese is gratinated.
Remove from the oven and decorate with fresh basil leaves.

PRESENTATION

Serve on a wooden base with chilli oil.

TIPS

If you like broccoli more, you can replace it with cauliflower.
