Ingredients

4 servings
  • 1 tablespoon of vegetable oil
  • 1/2 piece of onion in quarters
  • 2 cloves of garlic
  • 8 pieces of tomato in halves
  • 3 pieces of serrano pepper in halves
  • 1/4 of Cup of coriander
  • 1/2 Cup of chicken soup
  • to taste of salt and pepper
  • 1/2 tablespoon of cumin
  • 1 tablespoon of vegetable oil
  • 1/2 Cup of White onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 1 Cup of mushroom in cubes
  • 1 Cup of rajas poblanas
  • 1/2 Cup of corn
  • 800 grams of beef milanesa
  • enough of salt and pepper
  • 1 tablespoon of vegetable oil
  • 1 Cup of Oaxaca cheese shredded
  • enough of corn kernels to decorate
  • enough of coriander finely chopped, to decorate

    Preparation

    For the sauce, in a saucepan over medium heat, heat the oil and fry the onion with the garlic, tomatoes, serrano pepper and cilantro until the vegetables soften. Fill with chicken broth, salt, pepper, cumin and reduce to half. Let cool slightly and blend until you get a smooth sauce.
    Return the sauce to cooking about 10 minutes or until thickening. Set aside and keep warm.
    For the filling, cook the onion and garlic in a pan with a little oil. Add mushrooms, poblano rajas, corn, salt, and pepper. Cook until the juices are reduced, cool.
    In a table spread the milanesa beef fillets, add salt and pepper, a little of the stuffing and roll up. Secure with a toothpick and season again with salt and pepper.
    In a skillet over medium heat heat the oil and fry the rolls until golden brown. Add the cheese, cover and cook until au gratin.
    In an extended dish, place a little sauce and place the meat rolls, decorate with corn kernels and cilantro.

    PRESENTATION

    Serve the rolls with the sauce, served with beans and corn tortillas.

    TIPS

    You can also make them with beef or pork.
