Prepare this rich recipe for nopales stuffed with cheese and ham. They are weathered and bathed with a rich red sauce. They are a good idea for a day that you don't want to eat meat, also very easy to make.

Ingredients

6 portions
  • 12 nopales, cleansed
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 6 slices Ham
  • 6 slices panela cheese
  • 2 egg whites, for the weathered
  • 2 egg yolks, for the weathered
  • 1 pinch salt
  • 1/4 cups flour
  • 1 cup oil, reserve a spoonful for the tomato caldillo
  • 1 kilo tomtato, for the caldillo
  • 1/2 onions, for the caldillo
  • 2 cloves garlic, for the caldillo
  • 1/2 cups chicken soup, for the caldillo
  • 1 twig epazote, for the caldillo
  • 1 teaspoon salt, for the caldillo
  • 6 leaves epazote, fried, to decorate

Preparation

In a pot with boiling water, cook the nopales with salt and baking soda until they are soft. Drains
Place a slice of ham and one of cheese between two nopales, and secure with wooden chopsticks. Reservation.
For the weathering, beat the egg whites to nougat and reserve. On the other hand, beat the egg yolks with salt until sponge and mix in an enveloping way with the whites.
Cape the nopales and fry in a pan with hot oil. Drains
For the caldillo, roast the vegetables in a comal and blend with the chicken broth.
In a pot over medium heat, heat 1 tablespoon of oil and fry the caldillo with epazote for 5 minutes or until it thickens, season with salt.
Serve the nopales with the caldillo and decorate with epazote.

PRESENTATION

Bathe with the sauce and decorate with fried epazote.

TIPS

Baking soda in the cooking of nopales is to remove excess drool and give more color.
