Chicken and Vegetable Skewers

Ingredients

4 portions
  • 700 grams chicken, boneless and skinless
  • 3 tablespoons olive oil
  • 2 zucchini, medium
  • 16 chives, peeled
  • 16 mushrooms
  • 1 lemon
  • 1/2 cups parsley, finely chopped
  • sea salt
  • black pepper, freshly ground
  • skewer sticks

Preparation

Preheat the grill over medium heat.
Cut the chicken into squares 2 centimeters wide. Cut the zucchini about 1.5 centimeters.
Put the chicken in a bowl with a spoonful of olive oil, salt and pepper. In another bowl stir the vegetables with 2 tablespoons of olive oil and season with pepper and salt. Divide the chicken into 4 skewers. Assemble the skewers of the vegetables each one separately, use two banderillas for each vegetable.
Place the onion brochettes on the grill and cook for 5 minutes. Add chicken, zucchini and cooking skewers for another 5 minutes. Flip chicken skewers and zucchini. Add the mushroom skewers and cook for another 10 minutes turning to cook on both sides.
Season with lemon juice, olive oil and parsley.
