Ingredients

4 portions
  • 700 grams chicken, boneless and skinless
  • 3 tablespoons olive oil
  • 2 zucchini, medium
  • 16 chives, peeled
  • 16 mushrooms
  • 1 lemon
  • 1/2 cups parsley, finely chopped
  • sea salt
  • black pepper, freshly ground

Preparation

Preheat the grill to medium heat.
Cut the chicken into 2-centimeter-wide squares. Cut the zucchini about 1.5 centimeters.
Put the chicken in a bowl with a tablespoon of olive oil, salt and pepper. In another bowl, stir the vegetables with 2 tablespoons of olive oil and season with pepper and salt. Divide the chicken on 4 skewers. Assemble the skewers of the vegetables each one separately, use two flags for each vegetable.
Place the onion skewers on the grill and cook for 5 minutes. Add the chicken skewers, zucchini and cook for another 5 minutes. Flip the chicken and zucchini skewers. Add the mushroom skewers and cook all for another 10 minutes, turning so that it cooks on both sides.
Season with lemon juice, olive oil and parsley.
