Ingredients

4 portions
  • 1/2 cups bacon, finely chopped
  • 1/2 kilos ground beef, of beef, for the meatballs
  • 1 tablespoon salt, for the meatballs
  • 1 tablespoon black pepper, for the meatballs
  • 1 egg, for the meatballs
  • 2 tablespoons oregano, finely chopped, for the meatballs
  • 1 tablespoon chipotle peppers in adobo sauce, for the sauce
  • 2 cups tomtato, poached, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tablespoon oregano, for the sauce
  • 1 tablespoon thyme, for the sauce
  • 4 liters Water
  • enough salt
  • 2 packages Espiral La Moderna®
  • 1 tablespoon olive oil, for the sauce
  • 1 tablespoon garlic, finely chopped, for the sauce
  • 1/4 cups white onion, finely chopped, for the sauce
  • 1 cup beef broth, for the sauce

Preparation

For the meatballs, in a bowl mix the bacon with the ground beef, the salt, the pepper, the egg, the oregano, the chipotle, the parmesan cheese and the ground bread, form the meatballs and reserve.
For the sauce, liquefy the chipotle chile with the tomato, garlic, oregano and thyme until the ingredients are integrated, reserve.
In a pot, boil the water and when it is boiling, add the salt waiting for it to recover temperature and add the La Moderna® Brand spiral pasta, cook according to the package instructions. Drain, cool and reserve.
Heat a deep skillet over medium heat with the olive oil, cook the garlic with the onion until they are transparent, add the meatballs and sear until they are golden brown, cover with the tomato sauce and fill with the beef broth.
Once the boiling has ended, reduce the heat and cook until the liquid reduces by half and the meatballs are cooked. Integrate the cooked pasta, season to taste with salt and pepper and serve immediately with Parmesan cheese.

PRESENTATION

Serve the pasta with the sauce and the meatballs and a touch of parmesan.

TIPS

It is important that when you integrate the cooked pasta into the preparation, do not continue cooking it for long, as it will be overcooked. Just integrate and it's ready.

Queda muy rico. Una estrella menos porque todas las medidas de especias deberían ser cucharaditas en vez de cucharadas, de otro modo quedaría muy especiado, me alegro de haber seguido mi instinto.

En la lista de ingredientes no mencionan el queso parmesano, que indica en el procedimiento, también crea confusión sobre si el chipotle va en la salsa o revuelto con la carne de las albóndigas, se que es para la salsa, pero un principiante se puede confundir. Luego el ajo, va molido en la salsa o sofrito con la cebolla?
