Ingredients

4 portions
  • 1 tablespoon olive oil
  • 1 clove garlic, chopped
  • 1/4 cups black olives
  • 2 teaspoons capers
  • 1 teaspoon anchovy pasta
  • 1 tablespoon oregano, chopped fresh
  • 1 1/8 teaspoons pepperoncino Italian crushed red pepper, (red pepper flakes in English)
  • 1 Canned tomato, chopped without salt
  • 3/4 cups arugula, chopped
  • 1/4 cups parmesan cheese
  • 1/3 cups fresh parsley, chopped
  • 250 grams spaghetti

Preparation

Put a large pot with water and salt to boil. When it is boiling, cook the spaghetti as indicated on the package.
While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the garlic and cook for 1 minute. Add the parsley, olives, capers, anchovy paste, oregano and dried chili. Cook for 2 more minutes. Add the tomatoes and cook for 5 minutes. Add the arugula until it is cooked a little, about 1 minute.
When the pasta is ready, add it to the sauce so that it is well stirred in the tomato sauce. To serve sprinkle with Parmesan cheese.
