Ingredients

4 portions
  • 1/2 cups peanut
  • 1 tablespoon pepperoncino Italian crushed red pepper
  • 1/2 tablespoons sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon Fish sauce
  • 4 tomatoes, mature
  • 1 teaspoon fresh coriander, chopped
  • 1 teaspoon rice vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoons siracha sauce, (optional)

Preparation

After roasting the peanuts, chop them with a knife. Cut the chiles into pieces and add them to the peanuts with the rest of the liquid ingredients. Add sugar and move so that it dissolves. Taste and add salt if necessary.
Cut the tomatoes into 8 each and put in a salad bowl, sprinkle with cilantro and put on top the dressing with the peanuts and mix carefully.

PRESENTATION

It can be garnished with peanuts and coriander leaves.

TIPS

Sriracha sauce is from Vietnam and is found in supermarkets where they sell international food, along with rice vinegar and fish sauce. The chilies are optional, although they give it a very good flavor.
