This little cucumber and lasagna roll will be the delight for your family since the combination of its flavors makes it fresh and very original. It is a very colorful salad and easy to make.

Ingredients

4 portions
  • 11/2 liters Water
  • 1/4 tablespoons salt
  • 4 sheets lasagna pasta, e Luigi Speciale La Moderna®
  • 2 cups Water, frost (to stop cooking)
  • to taste olive oil
  • 150 grams cream cheese, at room temperature
  • 1 tomtato
  • 1 tablespoon red onion
  • 3 tablespoons pickled chili
  • 1 carrot, median
  • 1/2 tablespoons lemon juice
  • to taste salt
  • 1 cucumber, big
  • 5 leaves butterhead lettuce

Preparation

To cook the Lasagna, place in a pot or frying pan 1.5 liters of water, 1/4 tbsp salt and put on the stove over high heat.
When the water comes to a boil, we are going to place the 4 sheets of pasta, it can be one on top of the other, the quality of the Lasagna by Luigi Speciale La Moderna means that the sheets do not stick during cooking, which will take about 10-12 minutes to be al dente. During cooking, do not move the pasta sheets to avoid beating them.
After the cooking time has passed, we turn off the heat and we are going to carefully place each sheet of Lasagna by Luigi Speciale La Moderna in the container with ice water, this is to stop the pasta cooking once it has come off the boil.
Immediately remove each sheet from the ice water and dry it on an extended plate with the paper napkins, sprinkle a few drops of olive oil on each side of the sheet so that they do not dry out and reserve in a cool place.
Wash and disinfect the vegetables, reserve.
Chop the tomato, the red onion and the pickled peppers into small cubes, and finely julienne the carrot. Reserve a little tomato and carrot to decorate.
Place the cream cheese, tomato, onion, chili, carrot, lemon juice, and salt to taste in a small container, mix until you have a homogeneous mixture. Refrigerate until assembly.
Make thin and long slices of cucumber, leaving the skin to make it look more appetizing, preferably do it with a vegetable peeler and without reaching the seed.
To assemble each roll, place a slice of cucumber and on top a sheet of Lasagna from Luigi Speciale La Moderna, a tablespoon of vegetable filling with cheese, and roll along the entire length carefully so as not to remove the filling, close with a skewer stick and mount on a lettuce leaf, decorate with carrot julienne and diced tomato
Offer to your family and enjoy.

PRESENTATION

Decorate your plate using your creativity, you can place cherry tomatoes and baby carrots that children love! You can put a few drops of lemon on the cucumber to give it greater enhancement.

TIPS

The best secret to cook a lasagna is to wait for the water to boil, also using a lot of salt in the water, this does not affect the taste and quality of the pasta. To mix the cream cheese it must be at room temperature, so you will not beat the vegetables too much
