Fondue is a typical Swiss meal consisting of melted cheese served at the center with bread. In this recipe the fondue is prepared with white wine and Madeira wine to give it a more complex flavor.

Ingredients

6 servings
  • 400 grams of Gruyere cheese grated
  • 1/4 of kilo of Emmental cheese grated
  • 2 spoonfuls of cornstarch
  • 2 1/2 cups of dry white wine
  • 2 cloves of garlic
  • 2 spoonfuls of lemon juice
  • 3 spoonfuls of Madeira wine
  • walnuts freshly grated
  • 2 baguettes in squares
  • 1/2 Cup of White wine

    Preparation

Stir the cheeses with the cornstarch.
In a pot stir the white wine and garlic and bring to a boil over low heat. After 5 minutes, remove the garlic and add the lemon juice.
Add the cheeses little by little to the wine, moving so that they melt.
Continue moving forming eights and add Maderia wine, pepper and nutmeg.
Pass it to a casserole for fondue and serve with the baguette bread in pieces around it.
