This creamy vegetable recipe is a different way to include vegetables in your meals and it will work very well as a side dish for your special dinners, to accompany dishes with chicken or beef. It is very easy to prepare and thanks to its creamy sauce and melted cheese, it will become a favorite even for children who do not want to eat vegetables. You can use the cheese you want, just try to gratin the heat. Avoid over-cooking the vegetables, so they stand firm.

Ingredients

6 portions
  • 1 1/4 cups cream cheese, in medium cubes
  • 1/4 onions
  • 1 clove garlic
  • 1 cup sour cream
  • 1/4 cups Nestle media creama
  • 3 tablespoons chipotle peppers in adobo sauce
  • 1/4 cups milk
  • 2 tablespoons butter, diced for vegetables
  • 1/2 cups onion, in strips for vegetables
  • 1 cup pumpkin, in half moons for vegetables
  • 1 cup tomtato, in strips for vegetables
  • 1 cup mushroom, sliced for vegetables
  • 1 cup broccoli, precooked, for vegetables
  • 1 tablespoon oregano, for the vegetables
  • to taste salt, for the vegetables
  • to taste black pepper, for the vegetables
  • 1/4 cups parsley, finely chopped for vegetables
  • 1 cup manchego cheese, for the vegetables
  • enough parsley, finely chopped to decorate

Preparation

Blend the cream cheese with the onion, garlic, sour cream, half cream, chipotle pepper and milk until completely mixed. Reservation.
In a saucepan over medium heat melt the butter and sauté the onion. Add the pumpkin and tomato, cook a few more minutes and add the mushrooms, broccoli, oregano and cream. Season with salt, pepper and parsley; Add the Manchego cheese and keep on low heat until melted.
Serve in a bowl and decorate with chopped parsley.

Lo voy hacer se ve muy rico el problema q siempre tengo tengo q hacer la Comida para la familia q trabajo y son vegetarianos . Un platillo como este es el plato fuerte o tengo q acompañarlo con algo más???🤔 Ojalá q me puedan ayudar Gracias
