Ingredients

4 portions
  • 1 Romaine lettuce, washed, disinfected and cut into pieces
  • 4 anchovies, (drained and dried) in steaks
  • 4 cloves garlic
  • 1 onion, median
  • 3 cups chicken soup
  • 2 tablespoons lemon juice
  • 1/4 cups parmesan cheese, grated
  • 1/2 baguettes, cut into slices
  • 2 tablespoons parmesan cheese, grated
  • black pepper
  • salt
  • 2 tablespoons oil, Mazola Oliva y Soya
  • 1/4 cups oil, Mazola Oliva y Soya
  • 2 tablespoons oil, Mazola Oliva y Soya

Preparation

Heat two tablespoons of Mazola Oliva and Soya oil in a saucepan, add the garlic, onion and a pinch of salt, acitrona. Add the chicken broth, when it starts to boil let it cook over low heat for about 15 minutes.
Meanwhile, fill half of a large bowl with ice water.
Simmer the broth until it starts to boil again. Add the lettuce and leave for 4 minutes. Remove the pan from the heat, add 1/4 cup of the grated cheese, 2 teaspoons of salt and the anchovies.
Blend in parts until a smooth texture is obtained (fill the blender a little less than half so that the soup does not skip). Add little by little the olive oil Mazola Oliva and Soya to thicken the soup.
Pour the soup into a bowl and place this over the other with ice water and stir with a wooden spoon to cool the soup as quickly as possible.
You can refrigerate the soup and before serving add the lemon juice.
HOW TO MAKE PARMESANO TOAST: Spread the slices of baguette with Mazola Oliva and Soya oil, sprinkle with salt and pepper and bake until the cheese melts.

PRESENTATION

Serve the cold soup in previously refrigerated dishes, decorate with the parmesan toast. You can add a splash of Mazola Oliva and Soya oil if you want.

TIPS

The soup should be liquefied hot to make the texture silky. The goal of immediately cooling it down is to stop cooking the lettuce to preserve the flavor and color of the lettuce. This method is ideal for any vegetable.
