Ingredients

5 servings
  • 1/4 of piece of White onion
  • 1 clove of garlic
  • 2 cups of Pure Natural Tomato Puree®
  • 1 Cup of chicken soup
  • 2 teaspoons of oil
  • 1 Cup of elbow pasta they can be integral or normal
  • 2 pieces of carrot cut into small cubes
  • 1/2 Cup of whole kernel corn
  • 2 pieces of eggplant defiled and cut in cubes
  • 1 Cup of mushroom filleted
  • 1 Cup of broccoli cut into small pieces
  • 1 Cup of zucchini cut in half moons
  • 3 cups of chicken soup
  • 1/2 Cup of coriander finely chopped

    Preparation

    Blend the onion, garlic, the Natural Tomato Puree Del Fuerte® and the chicken broth. Reservation.
    Heat oil in a pot over medium heat and add the coditos to sauté a little.
    Add the blender mixture and cook for 5 minutes.
    Incorporate the carrot and cook for 2 minutes, add the eggplant and 3 minutes later add mushrooms, broccoli and a minute later the zucchini and to finish the chicken stock and wait until the vegetables are cooked.
    Add some chopped fresh coriander and serve.

    TIPS

    You can substitute the vegetables for those of your preference.
