Ingredients

5 portions
  • 1/4 white onions
  • 1 clove garlic
  • 2 cups Pure Natural Tomato Puree®
  • 1 cup chicken soup
  • 2 teaspoons oil
  • 1 cup elbow pasta , they can be integral or normal
  • 2 carrots, cut into small cubes
  • 1/2 cups whole kernel corn
  • 2 eggplants, defiled and cut in cubes
  • 1 cup mushroom, filleted
  • 1 cup broccoli, cut into small pieces
  • 1 cup zucchini, cut in half moons
  • 3 cups chicken soup
  • 1/2 cups fresh coriander, finely chopped

Preparation

Blend the onion, garlic, the Natural Tomato Puree Del Fuerte® and the chicken broth. Reservation.
Heat oil in a pot over medium heat and add the coditos to sauté a little.
Add the blender mixture and cook for 5 minutes.
Incorporate the carrot and cook for 2 minutes, add the eggplant and 3 minutes later add mushrooms, broccoli and a minute later the zucchini and to finish the chicken stock and wait until the vegetables are cooked.
Add some chopped fresh coriander and serve.

TIPS

You can substitute the vegetables for those of your preference.
