Ingredients: 1/2 kilos onion, chopped; 3 sprigs thyme; 1 leaf bay; 1/4 teaspoons salt; 1/4 teaspoons flour; 1/2 cups dry white wine; 2 cups beef consomme; 1 cup water; 2 tablespoons unsalted butter; 1 1/2 cups Gruyère cheese, grated; 1 ciabatta bread, thickly sliced

In a large pot, melt the butter over low heat. Add the onion, thyme, bay leaf, salt, and pepper. Cook until the onion is amber and extremely soft. Stir occasionally and cook for 30-40 minutes. Add the flour and cook for another 2 minutes, then add the wine and increase the heat. Allow the wine to evaporate for about 2-3 minutes.
