Ingredients

4 portions
  • 1/2 kilos onion, chopped
  • 3 branches thyme
  • 1 leave bay (laurel)
  • 1/4 teaspoons salt
  • 1/4 teaspoons flour
  • 1/2 cups dry white wine
  • 2 cups beef consommé
  • 1 cup Water
  • 2 tablespoons unsalted butter
  • 1 1/2 cups Gruyere cheese, grated
  • 1 ciabatta bread, thick sliced

Preparation

In a large pot melt the butter in a soft fire. Add the onion, thyme, bay leaf, salt and pepper. Cook until the onion is amber and extremely soft. Move occasionally and cook between 30-40 minutes.
Add the flour and cook another 2 minutes, then add the wine and increase the heat. Let the wine evaporate 2 to 3 minutes.
Add the meat stock and the water and let the soup boil for 25-30 minutes, letting the flavors mix and develop.
Spice with salt and pepper
Turn the oven into broil and put the slices of bread on a tray in the center of the oven. Toast bread until crispy.
Remove the bay leaf and thyme.
Put the soup in bowls that resist the heat of the oven, put one or two slices of toasted bread and cover with gruyere cheese.
Put the bowls of soup under the oven broiler until the cheese melts (about 3-5 minutes).
Serve immediately

Muy muy rica... Yo no usé el horno y me funcionó igual..como no tenía pan use crotones y encima les puse el queso. Buenísimo.
