This recipe is another easy option for how to prepare nopales, which are tasty and nutritious in Mexican cuisine. It is a combination of Italian food with traditional Mexican nopales and other vegetables.

Ingredients

6 portions
  • 1 kilo nopal, diced
  • 1 pending, medium bite
  • 2 carrots, chopped
  • 150 grams short pasta, noodle or codito
  • 1 zucchini, chopped green
  • 1 cascabel chili pepper
  • 1 can mashed tomatoes
  • 2 cloves garlic, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons vegetable bouillon, or 1 cube
  • 1/2 cups fresh coriander, chopped

Preparation

Cook nopales in boiling water with a pinch of baking soda to cut the slime for 5 minutes. Add 1 teaspoon of salt and 1/4 of chopped onion.
In a deep casserole, heat the olive oil and cook the carrots, onions, and garlic for 5 minutes. Add the bell pepper until it shines if you like it very spicy, if not, remove before the boil.
Add cooked nopales to the casserole, together with the pasta previously fried in oil and the tomato puree.
Add 3-4 cups of hot water. Cook for 5 more minutes and rectify the seasoning.
Finally add the zucchini and cilantro, let cook for 6-8 minutes approximately adding a little water and salt if necessary. When the pasta is soft, turn off the heat.

TIPS

To improve the nutritional value of the pasta, I recommend using wholemeal pasta. If you prefer more spicy, add dried chili seeds.
