This delicious vegetable soup includes a poached egg inside, which makes it unique. Its flavor will delight you and it is also a great source of protein and fiber. As well as vitamins and minerals that vegetables provide us.

Ingredients

4 portions
  • 4 eggs
  • 100 grams spinach, chopped
  • 50 grams carrot, chopped
  • 50 grams fresh herbs, those of your preference
  • 1 root beer plant
  • 100 grams nopal, chopped
  • 50 grams potato, chopped
  • 50 grams onion, chopped
  • 4 cups chicken soup
  • 100 grams celery, chopped

Preparation

Heat a pot with a little oil and add the vegetables.
Stir fry the vegetables and add the chicken broth.
Add salt and let it boil for approximately 20 minutes.
Add the eggs without shell to the soup.
Serves hot

TIPS

You can add more vegetables or replace them with others, you can also add pasta.
