For this reason, we share our five favorite and easy-to-make recipes that will surprise your friends, partner, or simply indulge yourself:
1. Smashed Avocado
In a bowl, mash 2 large pitted avocados and add a teaspoon of lemon juice seasoned with a clove of garlic. Spread the mixture on four slices of toasted bread and add a pinch of pepper to taste. Delicious!
2. Spicy Chickpeas
In a microwave-safe container, add 1 can of soaked chickpeas, 2 tablespoons of olive oil, 1 tablespoon of fresh lemon juice, half a tablespoon of turmeric, 1 small clove of garlic, and a pinch of pepper. Microwave the mixture for one minute at a fairly high temperature and stir well once the minute has passed. Use four slices of toasted bread to spread the mixture and top it with cilantro leaves.
3. Beet and Feta Cheese
In a bowl, mash the precooked beet well and add 1 tablespoon of olive oil, 2 tablespoons of orange juice, and 2 tablespoons of rice vinegar. Mix everything well and combine it with small pieces of feta cheese on four slices of bread. You can add a touch of grated orange for extra flavor.
4. White Beans
In a microwave-safe container, mix a can of white beans, 2 tablespoons of olive oil, 1 tablespoon of chopped fresh rosemary, and 1 clove of chopped garlic. Microwave the mixture for one minute at a fairly high temperature and stir well once the minute has passed. Use four slices of toasted bread to spread the mixture and garnish with crushed red pepper.
5. Pumpkin Delight
In a microwave-safe container, add four pieces of pumpkin, 2 tablespoons of olive oil, a slice of scallion, and a bit of fresh sage. Microwave the container for 6 to 8 minutes and wait for everything to cook well. Add goat cheese, and the mixture is ready for four slices of toasted bread.
