Abasolo, the first Mexican whiskey distillery that works with ancestral corn

If you are a whiskey lover, you cannot miss this culinary experience that will delight your palate with ancestral corn: Whisky Abasolo and Nixta Licor. These two incredible beverages are produced at Destilería y Bodega Abasolo, the only Mexican whiskey distillery.



Destilería y Bodega Abasolo is located in Jilotepec, State of Mexico, less than 2 hours from CDMX. Within what was once a hacienda, you will find the necessary machinery to produce one of the highest quality Mexican beverages through all its processes: nixtamalization, grinding, fermentation, and distillation of corn.

It is noteworthy that Destilería y Bodega Abasolo was restored by architect Lorenzo Álvarez, who designed it inspired by the simple structures of the silos used to store corn.



For the final production stage of Whisky Abasolo, there is an area filled with American white oak barrels outdoors, where the whiskey rests for 24 months. Additionally, Destilería y Bodega Abasolo also has a small museum where you can find all the information about ancestral corn and its transformation into whiskey.

If you can't imagine what a Mexican whiskey made with corn tastes like, let us tempt you with its notes of roasted corn intermingled with a hint of honey, vanilla, black tea, and leather. Undoubtedly, its gentle and spicy aroma will captivate you.

If you are looking for a sweeter flavor, do not hesitate to try Licor Nixta, which has a slight flavor of roasted corn, vanilla, and caramel, making it ideal to accompany a corn cake.
