Destilería y Bodega Abasolo, the only Mexican whiskey distillery.
Destilería y Bodega Abasolo is located in
Jilotepec, State of Mexico, less than 2 hours from CDMX. Within what was once a hacienda, you will find the necessary machinery to produce one of the highest quality Mexican beverages through all its processes: nixtamalization, grinding, fermentation, and distillation of corn.
It is noteworthy that Destilería y Bodega Abasolo was restored by architect
Lorenzo Álvarez, who designed it inspired by the simple structures of the silos used to store corn.
For the final production stage of
Whisky Abasolo, there is an area filled with American white oak barrels outdoors, where the whiskey rests for 24 months. Additionally, Destilería y Bodega Abasolo also has a small museum where you can find all the information about ancestral corn and its transformation into whiskey.
