Preparation
In a bowl: bust the eggs and beat them. Fry the sausage.
Add salt, pepper and fried sausage, then mix.
Arrange oil in the pan and pour the mixture, the pan should be over low heat, go moving so that the mixture is in the shape of an omelet.
Immediately add pieces of cream cheese to the fresh omelette.
Wait until the egg begins to be soldified and when that happens, add strips of Oaxacan cheese, tomato and onion. The latter must be fried before it is added.
Fold the omelette and garnish with pieces of tomato and coriander leaves.
