Ingredients: 1 kilo chambrete, boneless; 1 kilo beef rib; 5 guajillo chiles, cleaned and soaked; 5 ancho chiles, cleaned and soaked; 5 cascabel chiles, cleaned and soaked; 2 morita chiles, cleaned and soaked; water, for soaking chiles; allspice berry; 4 cloves; 1/2 teaspoons cumin; 1/4 teaspoons marjoram; 1/4 teaspoons thyme; 1/4 teaspoons ground ginger; 7 cloves garlic; 1 onion, small, in pieces; 3 leaves bay; 1 stick cinnamon; 1 tablespoon apple cider vinegar; 8 tomatoes; water; vegetable oil; salt; onion, to accompany; cilantro, to accompany
