Preparation
Grate the chocolate, put a bowl in a bain-marie. Place the grated chocolate and add the milk. Stir slowly until the mixture is dissolved, add the sugar and beat until the mixture is smooth, let cool.
To part, beat 2 cups of cream to beat with the blender or with the balloon whisk until it is spongy (aerated). Add the chocolate without stopping to move, take care not to lower the cream. Refrigerate half an hour.
