For the mousse, in a bowl mix the hot whipping cream with the milk chocolate until integrated. Gently fold in the semi-whipped cream, then add the raspberries and mix. Set aside. In a separate bowl, combine the crushed cookies with the melted dark chocolate. Set aside.
