Cut the pears in half and remove the core and seeds using a spoon or a parisienne scoop. Cook the pears in a pot with the white wine, water, orange zest, lemon juice, Carlota® Honey, ginger, cloves, star anise, and cinnamon over low heat for 15 minutes or until they change color slightly without breaking. Remove the pears and place them in a bowl to cool a bit. For the sauce: Soften the mascarpone cheese in a bowl with a hand mixer, then add the heavy cream and honey. Afterwards, mix very well until it doubles in size. Reserve in the refrigerator until use. To serve the pears: Place some of the cheese sauce on a flat plate and then add the two halves of the pear. Top with a little more sauce and finally sprinkle with nuts.
