Ingredients

4 portions
  • 1 cup raspberry, for the compote
  • 1 cup blackberry, for the compote
  • 1/2 cups refined sugar, for the compote
  • 1 cup wheat flour
  • 4 eggs
  • 1 cup skim milk
  • 1 pinch salt
  • 2 tablespoons sugar
  • 3 tablespoons butter, melted
  • 1/2 cups whipping cream
  • 3 tablespoons powdered sugar
  • 1/2 cups Yoghurt Natural Oikos®
  • 1/4 cups Vanilla Danette® Custard
  • enough Mint leaf

Preparation

For the compote heat over medium heat the raspberries and blackberries, add the sugar and let cook until you get a puree. Let cool and reserve.
For the crepas liquefies the flour, the eggs, the milk, the salt, the sugar and the melted butter. Let stand in refrigeration for 10 minutes
In a Teflon frying pan over low heat add the mixture and spread until covering the whole pan, cook each side for 2 minutes. Make about 8 crepes and reserve.
For the filling, beat the cream with the icing sugar and add the Oikos® Natural Yoghurt, Vanilla Danette® Custard and reserve.
Fill the crepes and pour the fruit compote.
Decorate with mint leaves.

PRESENTATION

In an extended dish, covered with compote and decorated with a mint leaf.
