Ingredients

6 portions
  • 5 tablespoons olive oil
  • 1/2 red onions, chopped
  • 1/2 broccoli, cut into small bouquets
  • 75 milliliters white wine
  • 4 eggs
  • 1 pinch black pepper
  • 1 pinch salt
  • 100 grams goat cheese
  • 2 tomatoes, sliced
  • 3 tablespoons parsley, chopped

Preparation

Preheat the oven to 200 degrees Celsius
Heat the oil in a baking pan and fry the broccoli florets until they are softened together with the onion.
Add the white wine and wait for it to evaporate in its entirety.
Beat the eggs and add to the hot pan, season to taste with salt and pepper. Cook for 2 or 3 minutes or until the eggs acquire consistency. Put the goat cheese and the tomatoes on top of the egg and go to the oven for 4 or 5 minutes or until the cheese melts or the eggs are well cooked.
For the parsley oil add the oil, salt, pepper and parsley in a food processor. Mix.

PRESENTATION

To serve cut the fritatta into slices and pour the parsley oil on top.
