In Mexico, accompanying a snack with a good dip or homemade guacamole is almost a ritual. That's why we bring to you this recipe of Adobo Shrimp Guacamole that you can decorate with little Serrano pepper.

The special thing about this typical Mexican dish is that the shrimp are marinated and made with a guajillo chile sauce. A great tip for this Lenten recipe or snack idea, is not overcooking the shrimp because they will be hard.

Ingredients

8 servings
  • 4 pieces of guajillo chili pepper clean and seedless, soaked in hot water
  • 1/2 piece of onion grilled
  • 1 tablespoon of black pepper
  • 1/4 of Cup of lemon juice
  • 1 tablespoon of Butter
  • 1/2 kilo of shrimp without shell and clean
  • 2 pieces of avocado for the guacamole
  • 1/4 of Cup of lemon juice for the guacamole
  • 1/4 of Cup of coriander finely chopped, for the guacamole
  • 3 pieces of serrano pepper finely chopped, for the guacamole
  • enough of Salt
  • enough of Ritz® cookies
  • 2 pieces of serrano pepper cut into thin slices, to decorate

    Preparation

    For the adobo, blend the guajillo chile with the onion, the garlic, the black pepper, the lemon juice and the salt.
    Heat a pan over medium heat with the butter, cook the shrimp with the marinade without overcooking. Season to taste and set aside.
    In a bowl, mash the avocados with the lemon juice, add the cilantro, the chile serrano, season with salt to your liking and set aside.
    Place a little guacamole on a Ritz® biscuit and a shrimp or two on top, decorate with slices of Serrano pepper, serve a few and enjoy.

    PRESENTATION

    Garnish with a little sliced serrano pepper.

    TIPS

    Don't overcook the shrimp or they will be hard.
