These eggs are a very healthy snack alternative for your whole family since they are full of protein. They are also a very good and delicious vegetarian option for everyone.

Ingredients

10 portions
  • 5 eggs, cooked and peeled
  • 1 can tuna, drained
  • 1/2 red onions, medium, finely chopped
  • 1 jalapeño, finely chopped
  • lemon juice, 4 lemons approx
  • 1 tomtato, seedless, finely chopped
  • 1 tablespoon olive oil
  • 1 pinch Dried oregano
  • salt, and pepper to taste

Preparation

Mix the purple onion, jalapeño, lemon juice and oregano. Season with salt and pepper. Refrigerate for 1 hour.
Cut the eggs in half vertically.
Drain the mixture of purple onion and jalapeño. Reserve a little lemon juice to season if necessary.
Combine the tuna, olive oil, tomato and the mixture of purple onion and jalapeño. Season to taste with lemon juice, salt and pepper.
Place some of the tuna prepared on each half of the egg. Serve cold or warm.

TIPS

If possible, let marinate the mixture of purple onion and jalapeño overnight.
