Ingredients

2 portions
  • 500 grams white fish fillet
  • 1 teaspoon chilli powder
  • 1/2 teaspoons cumin powder
  • 1/2 teaspoons oregano
  • 1/2 teaspoons garlic salt
  • 2 cups purple cabbage, or green cabbage cut along
  • 1/2 cups fresh cheese, crumbled (cotija)
  • 2 mangos, large, peeled and diced
  • 1/4 cups red pepper, diced
  • 2 green onions, the tails, finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh coriander, chopped fine
  • 1 green chile, fresh without veins and without seeds cut into thin and long strips
  • tortillas, hot

Preparation

Preheat the oven to 200 degrees C. In a bowl mix the mango, red pepper, lemon juice, cilantro, onion tails and green chili. Set aside.
In a bowl mix the chili powder, cumin, oregano and garlic salt. Spread this mixture in the fish fillets. Take out two large sheets of waxed paper and add a little anti-stick spray, accommodate the fish fillets. Let's make the waxed paper like a wallet, fold it and the corners close it down. We put them in a baking tray and bake it for 15 to 18 minutes.
Remove from the oven and carefully open the "sachets" because hot steam will come out. We serve the fish on hot tortillas, cabbage, mango sauce and fresh shredded cheese.
