Ingredients

12 portions
  • 2 1/2 cups Pre-cooked SOS® rice
  • 1 clove garlic
  • 1 onion, finely chopped
  • 4 poblano peppers, Roasted, peeled and without seeds. Chopped
  • 3 poblano peppers, Roasted, peeled and sliced
  • 3 red snapper fillets, in pictures
  • 1/4 kilos shrimp, peeled and deveined
  • 1 kilo white clam, soaked in cold water, changing it several times
  • 1 cup pea
  • 1 cup green bean
  • 6 cups chicken soup, or seafood broth

Preparation

To grind in the blender 1 clove of garlic, the chopped onion, the 4 poblano peppers, 1 green pepper with 1 cup of chicken broth.
Fry the puree in the oil. Add the rice, poblano chile slices and vegetables. Add 5 cups of chicken broth and cover. Leave 15 minutes on low heat.
Uncover the paella pan and arrange the clams, shrimp and fish.
Cover the pan with aluminum foil and leave in soft heat. Put more broth as needed.
Remove and let stand 10 minutes before serving.
