Wash the rice very well, until the water runs clear, let it drain, boil the rice with water over medium heat, then cover it; let it boil on high heat 2 mins. then at medium heat 5 mins. and finally, at minimum 15 minutes.
That absorbs the rest of the water. Try not to unclog the pot so you get better results. Remove the lid, cover with a cloth and let cool 10 mins.
Empty it in refractory and move it constantly, see adding the vinegar until it is cold, keep covered with plastic.
Place the makisu (bamboo dope to make sushi), on top of a nori leaf covered with rice and sprinkle with ajonjoli. Turn the leaf over, place a thin layer of cream cheese, a strip of cucumber, one of avocado and shrimp on the shore.
Go rolling and pressing with the makisu to form the rolls. Follow the same procedure with the other algae.
Moisten a knife with water, cut the rolls in 6 or 8. Serve it with soy sauce with lemon and orange juice.
