If sometimes you don't know how to make a tasty and easy salad, here is this recipe of Shrimp Salad with Mango Dressing, which you can prepare with few ingredients and the best of all is that it is very nutritious. This easy salad has kale as main ingredient, which is a great source of calcium and combined with shrimp and mango, will be an important source of nutrients.

Ingredients

4 servings
  • 500 grams of shrimp clean and peeled
  • 2 spoonfuls of chilli powder
  • 1 tablespoon of garlic powder
  • 2 spoonfuls of lemon juice
  • 2 spoonfuls of honey
  • 1 tablespoon of Pure Nutrioli® Soy Oil
  • 1 piece of mango cut into cubes
  • 2 spoonfuls of Apple vinager
  • 1/4 of Cup of orange juice
  • 1/4 of Cup of lemon juice
  • 1 tablespoon of Dijon mustard
  • 1/2 Cup of Oli de Nutrioli® Extra virgin Olive Oil
  • 1 tablespoon of lemon zest
  • 1 Cup of kale
  • 1/4 of Cup of basil whole
  • 1/2 Cup of cherry tomato of various colors, in halves
  • 1/2 Cup of mango in cubes
  • 1/4 of Cup of red onion julienne cut
  • 1/4 of Cup of almond toast, filleted
  • 1 Cup of quinoa cooked

    Preparation

    In a bowl, mix the shrimp with chilli powder, garlic powder, lemon juice, honey and Pure Nutrioli® Soybean Oil, marinate in refrigerator for 30 minutes.
    For the dressing, blend mango with apple cider vinegar, orange juice, lemon juice, Dijon mustard, Oli de Nutrioli® Extra virgin Olive Oil and lemon zest until emulsified.
    In a pan, heat Pure Nutrioli® Soy Oil over medium heat and cook the shrimp. Season to taste, and remove.
    In a bowl, serve kale, basil, cherry tomato, mango, purple onion, toasted almonds, quinoa and shrimp.
    Serve the salad and accompany with the mango dressing.

    Serve, accompany with the mango dressing and enjoy.
