For the dressing, blend the mayonnaise with the roasted pepper, mustard, chilies, salt, and pepper until you achieve a smooth and creamy mayonnaise. On a board, place two slices of bread, spread mayonnaise on each one, add manchego cheese, yellow cheese, and ham. Close it like a sandwich and cut into a star shape using a large cookie cutter or a paper template. Repeat the previous procedure until you have 2 large stars, 4 medium stars, and 2 small ones. The small stars come from the same sandwich. Use the smaller cutter to make a star out of cheddar cheese. For assembly, place a large star as the base and decorate with a bit of lettuce and a slice of cucumber; on top, place a medium star, lettuce, and cucumber. Again, place another medium star, repeat, and finish with the smallest one. Insert a wooden stick in the center so it goes through all the layers of the tree, and on top, place the little cheese star. Decorate with cherry tomatoes to simulate ornaments, sticking them on with a bit of mayonnaise. Repeat the entire assembly procedure to make two little trees. Serve.
