Preparation
Beat 1/2 stick of butter and brown sugar, once integrated, add 3 eggs, 1 1/2 tablespoon of vanilla and 1 1/4 cup of sour cream. Continue beating.
Sift the dry ingredients of the cake with a sieve to prevent lumps from forming. Integrate this into the previous mix.
Pour the mixture in a mold and bake at 190 °C (374°F) for one hour or until a toothpick inserted in the center comes out clean.
For the coffee cream: beat the egg whites in a bain marie in a bowl without it touching the water, only the steam. Add the cream of tartar, after 3 minutes add the powdered sugar, add the coffee and integrate it all together. Remove from heat and beat with electric mixer in a bowl until peaks are formed.
Replace the wire-whip attachment with a flat beater attachment in the mixer, (do it manually with a silicone or wooden flat beater if you do not have that attachment) and gradually add the butter that has been cut into pieces, continue mixing until you get a creamy batter. Refrigerate for 30 minutes.
Remove the cake from the oven, let cool and remove from the pan. Remove the frosting from the refrigerator and cover the cake spreading the creamy frosting with a spatula, then sprinkle some instant coffee granules on top.
