Gypsy Chocolate Arm with Walnut

Enjoy this chocolate gypsy arm, made with a dark chocolate sponge cake, filled with a creamy chocolate mousse, and toasted nuts decorated with strawberries and mint. The perfect dessert to celebrate mom!

Ingredients

8 portions
  • 10 eggs, for the cake
  • 1/2 cups vegetable oil, for the cake
  • 1 box Tres Estrellas® dark chocolate flavor cake flour, for the cake
  • powdered sugar, for the cake
  • 2 cups dark chocolate, for the mousse
  • 1 cup whipping cream, hot, for the mousse
  • 1 cup walnut, toasted and finely chopped
  • 1 cup chocolate, melted, for the ganache
  • 1/2 cups whipping cream, hot for the ganache
  • strawberry, to decorate
  • roasted walnut, to decorate
  • peppermint, to decorate

Preparation

For the cake, blend the egg, the oil, Three-star dark chocolate flavor cake flour, pour into a 30 x 40 cm diameter tray with waxed paper, with the help of a spatula, spread completely on the tray. Bake for 12 min at 170 ° c.
Sprinkle icing sugar on a blanket, turn the cake while still hot and remove the waxed paper, roll it up with the blanket. Let cool and reserve.
For the mousse; Mix the whipping cream with the dark chocolate until completely dissolved. Cover with plastic wrap and freeze for 30 minutes. Reservation.
In a blender with the balloon attachment, beat the mousse for 5 minutes or until you have a firm chocolate cream
Unroll the cake, fill with the chocolate mousse, add the toasted nuts and roll again, place on a rack with a tray and reserve.
For the ganache, mix the whipping cream with the chocolate, until completely dissolved. Reserve and let cool slightly.
Cover the roll with the ganache, with the help of a spatula distribute the chocolate, decorate with toasted nuts, strawberries and mint.
Serve with a cup of coffee.
